Tortinha de batata doce com queijo

Tortinha de batata doce com queijo é mais uma receita que não usa a farinha de trigo, a ideia original era fazer uma empada, mas a massa ficou um pouco mais cremosa, então chamamos de tortinha.

Além da tortinha de batata doce com queijo, a massa para quiche com grão de bico, a pizza de couve flor, o bolo fit de banana, o bolinho de arroz e a panqueca de aveia também não levam farinha de trigo no preparo.

Eu não tenho nenhuma alergia que me impeça de comer a farinha, mas me sinto muito mais leve e emagreci bastante depois que diminuí o consumo no dia a dia. Por isso estou sempre buscando novas opções de receitas para o meu dia a dia.

Ingredientes para a massa

500g de batata doce cozida

1 ovo

2 colheres de sopa de farinha de arroz

Sal

Pimenta do reino

1 colher de sopa de queijo parmesão ralado (opcional)

Preparo

Amassar as batatas e misturar todos os ingredientes, sal e pimenta do reino a gosto.

Arrumar a massa em forminhas de cupcake, eu usei as de silicone para não precisar untar, e assar em forno pré-aquecido por aproximadamente 10 a 15 minutos.

Ingredientes para o recheio

2 caixinhas de creme de leite

3 ovos

250 g de ricota

2 a 3 colheres de sopa de queijo parmesão ralado

50 g de gorgonzola

1 pitada de noz moscada

Sal

Pimenta do reino

Preparo

Bater todos os ingrediente do liquidificador, sal e pimenta do reino a gosto.

Quando retirar a massa do forno, dividir o recheio entre elas e assar por mais uns 15 minutos, ou até o recheio ficar consistente.
